Dr. Jennings is a Professor of Biotechnology at Fanshawe College. He presents an overview of their honey research from 2017 to 2021. It started with the examination of Ontario honeys and their healing properties. The healing properties of honey were measured by peroxide value. We also examined the effect of temperature and light on honey storage. Pollen was extracted and analyzed to see what phytochemicals were associated with which pollens. Extractions of honey from multiple years and geographic locations were examined using both GC/MS and LC/MS. The preliminary results of these studies will be presented showing the pesticide load across multiple years. Ending with their our contribution to the 2021 project on Adulterated Honeys.
